SOSA Pectin NH is a low methoxyl gelling agent derived from citrus peels, ideal for creating firm, smooth gels in fruit-based products like jams, jellies, and gummies. It works best in an acidic environment (pH 2.5-3.5) and is heat-stable, making it perfect for both home and industrial use.
